British food has never been considered gourmet – in fact, popular perception is that it's quite the opposite. Mangoes will replace traditional raspberries, soya chunks will replace tofu, chicken sausageswill replace pork sausages, and lamb and mutton will replace beef - while retaining the essence of the original dish.
